5 egg yolks

50 g icing sugar

500 g mascarpone

40 ml almond liqueur

16 lady fingers

500 ml strong espresso

Cocoa powder, for dusting

Icing sugar, for dusting.


  • Beat the egg yolks and icing sugar until foam the stir in the mascarpone and the liqueur.
  • Put the espresso in a flat dish, dip half of the sponge fingers in the espresso, and lay on the base of a rectangular serving dish.
  • Spread with half of the egg/cream mixture and dust with cocoa. Repeat the process with the remaining sponge fingers and mascarpone cream. Dust with cocoa and icing sugar before serving.
