Rice Pudding with Brown Sugar

Prep and cook time: 60 minutes

Cannot be frozen

Serves: 4


1 vanilla pod

1 litre milk

150 g pudding rice

4 tablespoons soft brown sugar

40 g butter

Ground cinnamon


  •  Split the vanilla pod opens lengthwise. In a heavy pan, bring the milk with the vanilla pod the boil. Stir in the rice and, stirring continuously, return to the boil. Simmer the rice gently on low heat, stirring frequently, for about 50 minutes.
  • Take the vanilla pod out of the rice scrape out the black seeds and stir them through the pudding.
  • Spoon the hot rice into four dessert bowls and sprinkle with brown sugar. Top with a knop of butter and dust with cinnamon powder.
  • Delicious with JAM
