Cherry clafoutis

Prep and cook time:  1 hour Chilling: 30 minutes

Can be frozen

Serves:  8 – 10


4 eggs

75 g sugar

80 g all purpose flour

1 pinch salt

1 pinch baking powder

100 g quark (low-fat soft cheese)

75 ml milk

750 g cherries, pitted


  • Beat the eggs with the sugar until thick and creamy. Beat in the flour, salt, baking powder, quark, and milk. Chill in the fridge for 30 minutes.
  • Heat the oven to 200C
  • Butter the pan. Spoon in 1/3 of the dough and arrange half of the cherries on it. Spoon on the remaining dough, smooth, and sprinkle the remaining cherries on top.
  • Bake for 30 – 40 minutes. Sprinkle with icing sugar and serve.
