California cheesecake

Prep and cook time : 2 hours

Cannot be frozen

Serves: 8 – 10


For the base:

100 g butter

200 g digestive biscuits, crushed

1 pinch cinnamon

1 tbsp sugar

For the cream cheese filling:

4 eggs

200 g sugar

800 g cream cheese

2 tbsp lemon juice


  • Heat the oven to 160 C
  • For the base, melt the butter and set aside. Mix the crumbs with the cinnamon and sugar, add to the butter and mix well.
  • Line the pan with baking parchment. Spoon in the crumbed mixture and press flat.
  • For the filling beat the eggs with the sugar until creamy. Beat in the cream cheese and the lemon juice. Spread the mixture over the base and bake for 1 hour.
  • Let cool slightly in the pan. Take out of the pan, cut into slices, and serve.
